Fresh pasta aficionados can get their fill of this Italian staple at DalMoros Fresh Pasta To Go on St. Armands Circle. Seventh-generation Venetian Gabriele DalMoro founded DalMoros in Venice, Italy, in 2012, with the goal of offering high-quality fresh pasta to the masses in an informal and affordable setting. He based many of the restaurant’s dishes on his family’s recipes, which he served in a to-go box.

“70 percent of his clients were American tourists,” says David Caruso, who along with his brother and extended family own several DalMoros franchises across the state of Florida. Caruso learned about the brand through a friend and called by his Italian heritage, he ventured to Venice to meet with Gabriele. In Dec. 2022, the Carusos opened the St. Armands location, hoping to capitalize on the high-traffic tourist zone.

Passersby can watch the team making heaps of fresh pasta through the restaurant’s window. “We don’t use egg in the pasta at all. It’s essentially flour and water because we use high-quality semolina flour, which has a yellow color, like they use in Europe, unlike the bleached and processed flour you find in the United States. When you eat pasta made from bleached flour you feel heavy, but the body processes semolina faster, so you don’t feel lethargic after eating it.” The lack of egg also means that the pasta is vegan-friendly.

The perfect bite for a day at the beach or a fast-casual meal inside the modern and inviting space, the pasta comes in many varieties. One popular sauce from Rome is Amatriciana, a red sauce made with onions and smoked bacon. Guests also enjoy the cacio e pepe, pasta with Pecorino cheese and pepper and pesto made with fresh basil and pine nuts. Toppings like chicken, green olives and sundried tomatoes are available to customize each dish. Between the pasta, sauces and toppings, there are over 100 combinations for diners. “It’s a great introduction for someone who has never before tasted fresh pasta,” says Caruso.
